There are only a few food that I absolutely love to eat. Don’t get me wrong, I love food, but I’m one of those people who loves a variety of foods. I like to switch things up, hence the Tasty Tuesday dishes.
But one thing that I really enjoy having is something that I didn’t discover until I was married with children. This item…. HUMMUS! I love hummus. I could eat it all the time. I love it with raw carrots, Wheat Thins, pitas, pita chips and tortilla chips. I also love hummus wraps. Grill me some chicken, smear it with hummus wrap it up with spinach and other veggies… I’m a happy eater.
I often have to remind myself to stop eating hummus when I’m having it as a snack. Did I tell you I like hummus?
I have a hummus recipe that I have worked on and tweaked over the years. It is based on Alton Brown’s recipe, but as always… I Lori-ized it. I can’t make hummus in the townhouse since my food processor is packed. This doesn’t mean I can’t eat hummus, nope I just buy Sabra Hummus.
Hummus is yummy… and healthy, but more important it’s yummy.
- 3 c. cooked chickpeas
- 1/2 c. water
- zest and juice of a lemon
- 2 Tbsp white vinegar
- 1/4 c. tahani sauce
- 1-2 cloves of garlic
- salt and pepper
in a small sauce pan heat apx 1/4 c. EVOO and minced garlic. let heat until it barely bubbles… do NOT overcook!
in food processor put chickpeas. mix to start breaking them up. Add lemon zest. Stream in water, lemon juice and vinegar. Scrap down sides. Add in cumin, paprika, salt and pepper (I go heavy handed on this and still usually end up adding more later). Add in EVOO with garlic. Let this mix for a bit then stream in more EVOO until you achieve the right consistency.
