Some days just call for baking. Today was one of those! I love to bake. I find it very relaxing and methodical. I know many people don’t put those two features together, but I do.
Today it is rainy and cold. We didn’t even get into the 40s today. It was a day to sit back with a cup of cocoa and have a muffin… so I baked some.
Here’s the recipe I used… well sort of used. I didn’t have 1 cup of mayo, so I used a combo of mayo, sour cream and vanilla yogurt since I didn’t have enough of any to make the whole cup. I also used a combination of chocolate chips and pb chips. They are yummy.
Colby just came home and decided to try the muffin. He doesn’t typically like muffins, but he did like the other items. He started with a microbite and ended up eating a half of a muffin. Then after I’d had the other half wished he had the whole thing. So I’d say he liked them a lot… and I do too!

- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup white sugar
- 3 ripe bananas, mashed
- 1 cup mayonnaise
- 1/2 cup chocolate chips (optional)
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Stir the flour, baking soda, baking powder, and sugar together in a bowl. Add the bananas, mayonnaise, and chocolate chips; stir until well combined. Pour into prepared muffin cups to about 3/4 full.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.
