Last week I made sweet and sour meatballs and Richard made meatball Stromboli. I purchased pre-made meatballs for these dishes. I purchased meatballs that I had never tried before… and never will again. They were pork based meatballs and tasted more like sausage than meatballs.
Blake is feeling sick today, so I spent the day home. Richard and Colby went to the grocery store to pick up lunch for the two of them as well as what we needed to make our meals this weekend. We decided to make meatballs, but this time they are from scratch!
I went back to the meatball recipe I prefer, Orechietti with mini meatballs. This recipe as a whole is delicious. It is such a light and tasty way to serve pasta with the fresh mozzarella and burst tomatoes. While I love this recipe, it was not what I wanted, but I still used it to make the meatballs.
I made the meatballs and cooked them in my cast iron skillet. This is one of the perks of having a gas stove top. I browned them up and then dropped them into the red sauce. Richard asked me to make rolls, so I again went to my new favorite roll recipe! I guess I should venture out and try others, but why… They are called French bread rolls to die for! This time I topped them with melted butter and salt before baking them.
So Richard, Colby and I enjoyed pasta with meatball with fresh rolls. Umm yummy and now I’ve had my meatball fix with good meatballs. I highly recommend this meatball recipe!
